Province of Manitoba Food Handlers Certificate Course
All food handling establishments with five or fewer employees are required to have at least one staff person who has successfully completed the Province of Manitoba training course. We offer a full day session which includes: review of the 11 essential units, practice tests, exam and lunch. This is a great course for home makers as well as those employed in the food industry at all levels.

Summer Cooking Camp for Kids - Summer 2017

Fabulous Fantastic Ferments - the Healthier Canning Alternative 
Have you been inspired to learn how to make naturally fermented food, but just don’t know where to start? This is a hands-on class that will teach the why’s and how’s of this ancient food preservation technique. Learn the health benefits of lacto-fermentation as well as the differences between canning and fermentation. Together, we will make fresh salsa and sumptuous sauerkraut. In addition, this class will teach how to make kombucha and water kefir, both bubbly drinks that contain beneficial probiotics and amino acids. Students will leave with recipes, jars of salsa and sauerkraut as well as started kombucha and water kefir.

Kids in the Kitchen - five class series
As a basic life-skill we all need, this series will teach your child proper knife techniques, decision-making skills and fill them with confidence to be an independent helper in the kitchen.  Imagine your kids making their own lunches, assisting with dinner prep and helping organize meals for the week.  Breakfast, dinner and lunches along with snacks and party foods will be make during our time together.  A full description of the class is here.   Minimum 10 kids.  Suitable for kids ages 8 - 12 years old.
  
Cooking 101 - 2 class series
This class demystifies the cooking process and sets you on the path toward more creativity in the kitchen.  Come learn how to assess the flavors, aromas, and textures of your ingredients, as you develop an understanding of fundamental cooking methods and how to choose the ones that will make your ingredients sing.  You’ll return home with newfound knowledge and confidence, along with easy-to-prepare recipes to make in your kitchen. Vegetarian Cooking
Being a vegetarian is more than just eating your veggies. Come learn how to eat healthy and balanced as a vegetarian or vegan, identify good sources of protein and fat and discuss how not to be a hyper consumer of carbohydrates.  Learn the basics  of cooking and make wholesome, tasty main dishes, sides and salads.  We will highlight the use of legumes and whole grains, use seasonal vegetables and discuss how not to be a hyper consumer of simple carbohydrates.

The Art of Macaroons from around the World
Parisian Macarons, Italian Amaretti and Coconut Macaroons are all related; their origins can be traced back to the 1300's and Marzipan.  All delicious and slightly different from one another, but all 100% gluten free.  Made up of ground almonds, sugar and egg whites, these bite-sized treats have become very popular.  This class will teach you how to prepare the mixture, flavour, pipe, bake and layer up these sweet treats.  Each guest will go home with a selection of these tasty cousins.  We will provide the ingredients, equipment, aprons and packaging.

One of the latest trends in the nutrition and fitness world is all about eating paleo.  But what exactly is the paleo diet and is it really as restricting and "extreme" as some people think?  Or is this lifestyle based on what our Paleolithic ancestots are, something everyone should consider.  Chrleswood fitness professional and Holistic nutritionist, Sara Gerullis, examines the paleo lifestyle in more detail, having herself gone paleo for the 40-day period of Lent.  You'll learn what foods you can eat, the health benefits of paleo andhow you can prepare delicious and paleo-approved meals that don't require a club and stalking wild prey.
